Mediterranean Salmon & Lentils

Wild herb salmon with red lentils & rocket salad with tahini dressing
Ingredients:
- 2 salmon fillets
- 1 tbsp olive oil
- Salt & black pepper
- Zest of 1⁄2 lemon
- Small handful fresh herbs (dill, parsley, chives), finely chopped
Salad & Lentils:
- 2 large handfuls rocket (arugula)
- 1⁄4 small red onion, thinly sliced
- 2⁄3 cup red lentils, rinsed
- Small handful fresh herbs: dill & parsley, chopped
Tahini Dressing:
- 2 tbsp tahini
- 1 tbsp lemon juice
- 1 tsp honey
- 2-4 tsp water (to thin the dressing)
- Pinch of salt

Instructions:
- In a small saucepan, combine rinsed red lentils with 1 3⁄4 cups water and a pinch of salt. Bring to a gentle boil, then simmer uncovered for 8-10 min until tender. Red lentils will soften and become slightly creamy. Drain lightly and set aside to cool slightly.
- In a large bowl, combine rocket, red onion, and chopped dill & parsley.
- Pat salmon dry and season with salt, pepper, and lemon zest. Heat olive oil in a pan over medium-high heat. Cook salmon skin-side down for 4-5 min until crispy, then flip and cook another 2-3 min. Scatter fresh herbs over the salmon at the last minute.
- In a small bowl, whisk together tahini, lemon juice, honey (if using), water, and a pinch of salt. Adjust the consistency with a little extra water if needed for a smooth drizzle. Pour the tahini dressing over the rocket mixture and toss well
to coat evenly. - Divide everything onto two plates, keeping components separate: add a portion of lentils, a serving of the
tahini-dressed salad, and a salmon fillet to each plate. - Garnish with extra dill, parsley, or sesame seeds if desired. Serve immediately.
