Courgette Orzo
Simple, warm and courgette-based, this orzo is an autumn staple! Make the recipe and watch our video of 3 courgette-based recipes too.
- 2 small courgette finely sliced
- 1 leek finely sliced
- 2 cloves garlic, crushed
- 1/2 cup orzo
- 350ml stock/ bone broth
- Zest of 1 lemon
- 1/2 cup grated Parmesan
- Fresh basil & extra virgin olive oil to garnish

- Add leek, olive oil and garlic to a pan on low heat and sauté until translucent.
- Add the courgettes and cook for 3-5 minutes until starting to soften
- Add orzo and stock and cook, stirring regularly until liquid is mostly soaked up and orzo is soft. Add a splash more stock if you need.
- To finish add Parmesan, black pepper and stir until melted. Serve with a drizzle of olive oil, lemon zest and basil
