This nutrient rich salad has all the components you need to support a happy healthy period. It contains iron and magnesium to replenish stores lost from menstruation whilst also supporting cramping. Vitamin C aids the absorption of the non-heme (plant) iron. Beetroot, spinach and rocket are high in nitrates which are converted into nitric oxide for oxygen and nutrient transportation around the body. It also packs a healthy dose of fibre to help effectively detox hormones and keep blood sugar balanced.

Method:

  1. Wash, drain and chop your salad leaves then put them in a bowl
  2. Add your cooked lentils to the bowl
  3. Chop your beetroot and feta into bite sized squares and add to the bowl 
  4. Slice the orange into circular segments and cut away the peel then cut it into bite sized pieces
  5. Lightly toast the nuts and seeds in a cast iron pan for 5-10 minutes until the seeds have started to turn slightly golden brown and become fragrant then add to the bowl 
  6. Mix together and enjoy!

Ingredients

  • 1 Cooked beetroot
  • 1/2 Orange
  • 100g Cooked brown Lentils
  • 10g each of rocket, watercress and spinach
  • 30g Organic Feta
  • 1 tsp Toasted sunflower seeds
  • 1/2 tbsp Chopped walnuts
  • Optional salt and pepper to taste
