Matcha Peppermint Protein Ice Cream
Cool, creamy, and packed with protein, these Matcha Peppermint Protein Ice Creams are the ultimate frozen treat with a twist.
Ingredients
- 100g cashew nuts, soaked in boiling water for 30 minutes then drained
- 1 tsp high quality peppermint extract
- 3 large tablespoons protein powder
- 1 cup yoghurt of choice (greek or coconut is best)
- 2 tbsp maple syrup or honey
- 1 heaped tsp matcha powder
- 4 tbsp boiling water
- *Optional - add dark chocolate chips

Method
- Add everything into a high speed blender and blend until smooth and creamy.
- Pour into ice cream moulds and set overnight.
