Homemade Overnight Oats
Start your day the right way with this nourishing overnight oats recipe full of fibre and protein.

Serves 4
Full of fibre, mouthwatering summer berries and topped with a velvety lemon vanilla yoghurt for added protein.
Ingredients
- 50g sliced/blanched almonds/sunflower seeds/handful of cashews
- 500ml water
- 250g oats
- 50g chia seeds
- 1 tbsp High Fibre Plus
- 1 tsp cinnamon & ½ tsp vanilla powder/extract
- A pinch of sea salt & 1 tbsp maple syrup/honey
- 200g raspberries/strawberries
- 250g yoghurt
- Zest of 1 lemon
Method

For the homemade milk, blend the nuts or sunflower seeds and water until smooth and milky. Pour into a large bowl, adding the oats, chia seeds, High Fibre Plus, cinnamon, maple syrup or honey and sea salt.

Mix really well, then leave to sit for at least 30 minutes, or ideally overnight in the fridge, until thick and creamy.

For the berry layer, add the raspberries or strawberries to a bowl and gently smash them with a fork. Add the maple syrup or honey and stir all through the overnight oats. In a separate bowl, mix the yoghurt with the lemon zest and vanilla powder or extract.

In the morning, layer all together in pots or bowls. Serve straight away, or keep in jars in the fridge for easy breakfasts throughout the week.
