Wild Salmon Skin-Glow Toast Topper
Quick and nourishing, this lunch is an easy protein-rich recipe that's perfect for meal prep. Serve on sourdough with leafy greens and pickled red onion.
(Makes enough for 2 lunches)
Ingredients
- 2 fillets hot smoked salmon or trout
- 1/3 cup thick Greek yoghurt
- Juice of 1/2 lemon
- 1/4 cup chopped fresh herbs (fennel, parsley, chives are my favourites)
- 2 tbsp chopped capers
- Salt & pepper
- 1 tsp Dijon mustard
- 2 scoops of Wild Nutrition Collagen 500 Plus

Method
- Mix everything together and store in an airtight container.
- Serve on sourdough with leafy greens and pickled red onion.
