Fibre-rich overnight oats

These overnight oats are delicious, nutritious, and so simple to prepare. Thanks to all the healthy fats, protein and antioxidants, it’s the perfect breakfast for slow-release energy.  

Ingredients

  • ½ cup oats 
  • 1 tbsp chia seeds 
  • 1 tbsp milled flaxseed 
  • 150ml unsweetened almond milk (or milk of choice) 
  • ½ cup raspberries (can be frozen) 
  • 1 tbsp almond butter 
  • ½ tsp cinnamon 
  • 1 tbsp pumpkin seeds

Method 

  1. Mix all ingredients (except half the raspberries) in a jar or bowl.

  2. Stir well and refrigerate overnight (or at least 4 hours).

  3. Top with the remaining raspberries in the morning.
