Wonderfully easy summer vegetable recipe giving you 4 out of your 5 a day recommendation. Have it as a vegetarian option with Greek feta cheese or choose to use a vegan feta option instead.

  1. Cut up all the vegetables, place them in an oven dish.
  2. Crumble in the feta.
  3. Dress generously with olive oil and mix everything together.
  4. Season with salt, pepper and dried oregano.
  5. Place in the oven at medium heat 180 C for 20-25 minutes, or until the vegetables are soft and slightly roasted.

    • 2 bell peppers
    • 1 courgette
    • 1/2 aubergine
    • 150g feta cheese
    • Olive oil
    • Salt and pepper
