Wonderfully easy summer vegetable recipe giving you 4 out of your 5 a day recommendation. Have it as a vegetarian option with Greek feta cheese or choose to use a vegan feta option instead.
- Cut up all the vegetables, place them in an oven dish.
- Crumble in the feta.
- Dress generously with olive oil and mix everything together.
- Season with salt, pepper and dried oregano.
- Place in the oven at medium heat 180 C for 20-25 minutes, or until the vegetables are soft and slightly roasted.

- 2 bell peppers
- 1 courgette
- 1/2 aubergine
- 150g feta cheese
- Olive oil
